Green Bean & Goats Cheese Salad

When green beans are in season and you're looking for a lovely summery side for your main meal, here's a winner! Its super quick and easy and looks very beautiful.

Green Bean & Goats Cheese Salad
This is a great summery side dish that looks beautiful on any long lunch table.
Ingredients
  • 3 large handfuls of green beans
  • 3-4 large leaves lettuce
  • juice of 1 lemon
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 2 tablespoons goats cheese
  • 2 tablespoons flakes almonds
Instructions
Steam green beans until cooked but still crisp. Let cool in cold water then drain. Combine lemon juice, garlic, olive oil and honey. Cover beans with the dressing and mix through thoroughly. Lay out lettuce leaves on a platter. Scatter the beans with the dressing over the lettuce leaves. Top salad with crumbled goats cheese and almonds.
